If you’re like me, you’ll be spending plenty of hours between tonight and Christmas Day in front of the oven cooking.


Some will be making meals for a large family crowd or you’re like me, trying to make a meal for two. I always end up making too much for the two of us and we end up eating Christmas dinner all week long.

Here are just a few of my favorite dishes that will hit my table tomorrow.

Creamy Mac & Cheese, Collard Greens, Candied Yams, Potato Salad, Rosemary Roasted Turkey, Sausage and Apple Stuffing, Homemade Cranberry Sauce, Homemade Buttered Yeast Dinner Rolls, and for Dessert Lemonade Icebox Pie.


After dinner drink will be eggnog and Cosmos with Grey Goose.

If you are making a meal for two and don’t want lots of leftovers, try cutting the meal in half when making your dish. If if says use an entire box of elbow macaroni, only use 1/2 a box. Get a 12lb Turkey instead of 20lbs.

You won’t have leftovers for Turkey Soup, Turkey and Cranberry Sandwiches or Turkey Salad. But it beats throwing away lots of unwanted food.

Or better yet take you leftovers to a place where you know there are homeless people and give away plates. I’m sure they will be grateful for the hot meal.
